This past weekend I decided to institute one vegetarian dinner per week in our household -- I shall call them Meatless Mondays. I did not, however, inform my husband or child, because when I suggested it a while back they both gave me the hairy eyeball and requested bacon cheeseburgers for dinner. So Iapos;m just going to cook it, and if they whine, they can make themselves a goddamned bacon cheeseburger. Tonight is manicotti florentine or cheese and bean enchiladas, Iapos;m not sure which. What are your favorite meatless entrees?
